Chicken Kebabs Marinade

ingredients
2 pounds chicken – boneless white or dark meat
2 cups Wünder Creamery plain quark
1 cup coarsely chopped fresh cilantro leaves and stems
1/2 large yellow onion, coarsely chopped
3 garlic cloves, coarsely chopped
1 Tbspn. fresh lemon or lime juice
1 Tspn. ground cumin (freshly ground is best)
1 1/2 Tspns. ground paprika
2 Tspns. kosher salt plus more for seasoning
1 Tspn. freshly ground black pepper
1 2″ piece fresh ginger, peeled and chopped

method
Thoroughly season chicken with salt and pepper. Combine the rest of ingredients in a large bowl and incorporate the chicken well into the marinade mixture. Cover with a plate or thin plastic wrap. Marinade for at least 8 hours or overnight. When ready to cook, remove the chicken from the fridge and let stand at room temperature for about 30 minutes before grilling.
