Coffee Quark Crumble Muffins

1/2 stick melted butter
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1/3 cup whole milk
8 oz Wünder coffee quark
1 3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon

for the streusel:
2/3 cup walnuts
1/3 cup light brown sugar
1/2 tsp cinnamon
2 tablespoons melted butter

Preheat oven to 350°F
For the streusel, combine chopped walnuts, melted butter, brown sugar and cinnamon in a bowl with your hands, place in the refrigerator
In a large bowl, whisk the butter, milk, sugar, eggs, vanilla, and coffee quark making sure not to over mix
Stir in flour, baking soda, baking powder, and cinnamon
Pour batter into a lined muffin tin then top with the streusel
Bake for 20-25 minutes until golden brown
