4-5.3oz containers of plain Wünder quark
6 oz. egg noodles, any shape
½ stick unsalted butter, melted for 30 seconds in a microwave
4 large eggs
¼ cup of granulated white sugar
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon Kosher salt
½ cup of yellow raisins
½ cup of dark rum, for soaking the raisins
Heat the oven to 350°. In the meantime, soak the raisins in the rum to get them plump.
Boil water, lightly salted, for the noodles. Cook for about a minute less than what the packaging instructions indicate. Drain and mix in some neutral oil to prevent sticking while working on the batter.
In a large bowl beat eggs with sugar for about a minute or two until frothy. Add in the quark, cinnamon, vanilla extract, and salt then mix well. Fold in the melted butter. Mix in the noodles and raisins (drained), incorporate well with a spatula. Pour into a prepared (generously greased with a stick of butter) 9 x 12 baking dish.
Bake for 50-55 minutes. If the noodles are not crisped up by the end, hit them under a broiler for about 5-7 minutes, keeping a watchful eye so that it doesn’t burn!
When ready, let cool for about 10 minutes then enjoy!
